Henry Chadwick, the creator of the scoring system needed S for sacrifice, so he chose K for strikeout - K being the last letter of "struck," which was then more commonly used than "strikeout". Chadwick was a journalist who started the idea of scoring games in order to have a more contained score when writing his columns. He also invented the 1-9 position system as well (1-Pitcher, 2-Catcher, 3-First-baseman...etc.).
