Because the MLB Draft has so many rounds, and the players dont even get to play in the MLB for at least 1-2 years after they get drafted, and they may not even end up playing for the team they got drafted by, due to trades and stuff. I dont know anything about the NHL draft, so I couldnt tell you.

mainly because college hockey and baseball are not very popular and most people are not familiar with most of the players being drafted.

Because even after the MLB and NHL drafts many of the players do not play for the teams right away. Also in MLB if a player gets drafted and doesnt like the team that drafted him then he can just not sign and he gets thrown back into the draft pool the following year. In the NHL many of the draft picks play in the AHL or another independent hockey league before they make their appearance in the pros. So unlike the drafts of the NBA and NFL the players are not usually an immediate help to a franchise so not as many fans are interested in these drafts.

No one cares about the minors. They just want to see the big boys. Why do you think the NFL draft is so widely watched? You got it! No minor leagues in football. They take too many rounds and it takes too long for those players to get to the show, if they even get to the show.
