You can look for a various number of things. Most balks will occur while the pitcher is in the stretch (or while there are base runners).Here are some things that result in a balk call.
1-Dropping the ball while on the mound
2-After holding onto the ball in your glove, Removing your hand from the ball
3-Starting a wind up and not completing the pitch
4-Stepping past a 45 degree imaginary line while trhowing to 1st or 3rd...with mound to first or third being 0 degrees and mound to home being 90 degrees(Lefties to 1st and Righties to 3rd from stretch)
5-Bringing your foot to the 2nd base side of the plane of the mound and then throwing to a base.
6-"Twitching" or making any type of movement with a body part other than your head and not continuing into the flow of the pitching motion
7-Performing what I call the "Jumping pickoff to first" for Righties and not throwing the ball.

The hardest thing for the common fan is to determine when a left-handed pitcher has crossed the 45 degree angle w/his leg when pitching out of a stretch. In this situation, try to notice which direction the pitcher's front foot (his right foot) is facing when it lands on a pick off attempt. If the pitcher has thrown to 1st base and left foot lands and points to home plate, he has balked. Remember, the key here is that he throws to first base. By the rules book, Official Rule 8.05 lists the 13 ways a pitcher can commit a balk.The only way to spot them is through training and watching a lot of baseball. The most common (start and stop, no step) are pretty simple.
It just takes time to learn them all and spot them all.
