Basically what has already been stated...it was setup by Chadwick for doing box scores. Different scorers record different strikeouts different ways (backwards K's, etc.) but the basic idea is you want every action to be easily abbreviated. S was being used for sacrifice, so he picked K for struck out. Sorta like how a walk isn't a W (win), but rather referred to as base on balls, or BB. You want them all to make at least a bit of sense, and I imagine S for sacrifice and K for strike out makes more sense to the average fan to look at than S or SO for strikeout (look at your baseball cards though and you'll see lots of SO) and trying something else of sacrifice. Plus, S then works great when trying to differentiate between a sac S and sac fly SF.

But basically, to make a short story long, Chadwick picked it because it made sense to him, and he probably thought it would make sense to look at.
