I'm interested because i'm trying to get fit, and I can do 5 miles in just under 12 and a half minutes. Does anybody know what the proper time should be for an average person? or even a professional?

If your trying to get fit your best to go longer rather than faster.You will burn more fat and build condition if you can stay on the machine for a greater period of time.
The best pace to train at, to gain fitness, is your aerobic threshold. This is best described as the pace that you pant(It is difficult to hold a conversation but you are not gasping). This is around 70-75% of your maximum heart rate.(for those that insist on heart rate monitors).
Aerobic threshold training targets you circulatory system Increasing the volume of blood that can be pumped around. Increased blood flow means the muscles can work harder.
As your fitness improves you will be able to output more power at this same pant pace. On a bicycle your speed will increase.Be patient this is a slow process.
As a guide a reasonably fit rider should be able to maintain a speed of around 20 mph and stay within their aerobic threshold.
As far as the bull goes Speeds of greater than 30 mph are quite possible by average riders but only over short distances. (5 miles is a short distance). A steep grade is considered anything over 10% or 5.7 degrees. I think there was a little bit that touched a 13% grade in one stage of Le tour last year.

Even in the Tour de France flat stages, they don't average much more than 27-28 mph, and that's with drafting off each other.
