As players get older, they use their head more often to pass, receive, shoot or "redirect" the ball. There are two types of headers: a) a directional header where the player wants to control the ball (i.e., a pass, shoot or receive) & which is struck with the forehead (just below or at the hairline, where the player can see the ball; teach this by having them hold the ball on the forehead & asking them if they can see it) or with the side of the head; and, b) a clearing header (where the objective is just to send it as far as possible) which is struck with the forehead at the hairline or with the top of the head & where the defender often leaps to get more power. Don't even try to teach headers until U-10 & don't stress them until U-11. If you play a lot of small sided, by U-10 or U-11 they will be learning on their own. Don't use a heavy or hard ball to teach headers; use a soft or underinflated ball. A header that is aimed at the ground near the goal line (so it will bounce) is particularly difficult for the goalie to save.

In short, heading means hitting the abll with your head. You can use heading to redirect the ball (hitting it so it goes either forwards, backwards, or sideways). Or, you can use it to trap (this works if it's coming to you in the air; this connects to redirecting because you might want to hit it to one direction or try and lightly head it so it falls at your feet.
All of this takes a lot of practice! I recommend doing headers in practice every day. Just have a partner throw soccer balls at you, and try to head them. Them, you can progress to having someone throw a soccer ball high in the air and two people trying to get it at the same time. This is the type of situation you'll most encounter in games.
Be careful, though! If you don't do headers properly, they hurt! Try to hit it off you forehead, near the hairline. Don't let it hit your face! (I did that once and got a bloody nose for an hour and a half. It really sucked.) Also, when you do a header, here's a good piece of advice: Don't let the ball hit you, hit it. This means that when you do a header, try to go forward and hit it yourself. Don't let it bounce off you, because that really hurts. If you're going to do a header, make the commitment and go for it.
