Is it worth buying the IWI SP-21 Barak pistol (Israel) or the mauser m2? which is better?

Great answer David.The Mauser is a SIG, which is an excellent quality line of firearms. I think I read that the M2 was limited in production. Great gun, but not especially practical to own for the long run because it's a rarity. Hasn't it already been ended in production?
The Isrealis make great weapons. They have to. But unless you are in Isreal or wish to collect Isreali weapons, they too can be less than ideal for long term practical ownership.
Both of these are great firearms but they really fit into a niche market. Nothing at all wrong with them, but not practical for a purely utilitatian purpose.
Do as David says and get a more common pistol, like a 1911 or Hi Power, or even a Smith or Glock.
If and when you need to sell or trade it or get it fixed...the man won't look at you funny!
Don't buy either. IMI guns (Jericho/Baby Eagle/Uzi Eagle, Barak) and oddities (M2) come and go. Buy a classic (1911, Highpower) or contemporary classic (P-92/PT-92 series, CZ-75/TZ-75) and relax. Small parts (pins/springs) and magazines are more available and the guns are strong on the market. Seems to me that you are avoiding polymer and that's ok. I tried it and really did not like it. Buy what you want, but beware of deals on oddballs or slick marketing. I used to want to be "different", but in the end the classics I listed above are wise choices. I pretty much stay on the beaten track anymore.
