At what point, caliber, grain, size etc does a bullet turn into a shell, and from a shell to a missile, and then to a rocket?

You talking about several different kinds of munitions, none of which are related.Caliber describes the diameter in inches of the breech of a rifle. A shell, as in shotgun shell, is not made like a rifle or pistol cartridge, but has a base, shell, primer, wadding, shot, and powder charge.
A rocket is unguided. A missile is generally guided.

A bullet is merely the projectile discharged from a small arms cartridge(the cartridge consisting of the brass case,primer,powder,and projectile/bullet).Shells are not just artillery they are also what you use in a shotgun because they usually contain more than 1 projectile with the exception of slugs.But around .50 cal(12.7 mm) or the Com Bloc 14.5mm would seem to me to be the usual dividing line.Once you hit 20mm they are usually considered cannons.

20mm is the standard for the dividing line between bullet and shell.
For a rifle 15mm could make a good argument but shotguns and muzzle loaders can be readily found in 19mm (.75 caliber) and plus. But these are not really rifles, even if they have a rifled bore.
Shells and missiles/rockets are different things and size has nothing to do with them. The only blurring factor there is the rocket assisted projectiles (RAP) which are artillery shells with a (relatively) small rocket motor to further their range.
Rockets are missiles if they possess post launch guidance, whether on-board or not.

bullets and shells ate projetiles with properties of projectiles you learnt when you learnt maths. They have to be less than half a inch to be a bullet and shells are very bigger than that so that there is no calibers desinganted to them. Rockets and missles are using not nessesarly a projectile but is powerd by a rocket engine witch is using the Newtons 3rd law of motion that cae in Principa Mathematica years ago and a missle more fo a guided and target specified and type varied of a rocket while as the rockets are just rocket engine backed bambs that take them mostly from city to city or rarely from country to country but the contnent to continent rocket os a bit you know idiotic ting to start with but they do go to the moon you know with mre of guidence although ther there's no Warhead or the rockets/missles bomb. I've seen a few answers centering around the caliber of the arm, but I'd like to offer an alternative:If it's a shoulder-fired weapon, or a handgun, then it's a cartridge (bullet). Once it becomes a crew-served weapon, then it's a shell.
Missiles and rockets are propelled once leaving the barrel. And in my opinion they're interchangeable.
