I`m going sea-fishing in Cornwall in mid August. Would appreciate some advice on what bait and tackle to use.
What fish would I expect to catch? Where is the best area to go?

Any clear website for assembling rifles?
Visit local tackle/bait shops, they give the best local advice,a lot depends on which fish are about at the timeIf you are going sea fishing the best way to do it is to go out on a half day or full day fishing trip where the bait and tackle are supplied. Plus the captains of the fishing boats know all the best areas to fish. You can expect to catch a wide variety of fish including Dog Fish, Tope, Bull Huss, Whiting, Mackerel, Plaice to name just a few.

But you will need a good cast of 100yards + .
Boat... 50Ib main line .2 hook on a Running ledger... full of Lugg worm or Crab
As for fish ... shore .. Place / Bass / whiteing .etc
As for fish ... Boat ...Big Bass ( 6lb+ ) .Place .Tope ( Kin Big 14Ib+ )... with tope a very strong wire trace ...
Hope this helps .
rock fishing will be the best way of fishing in cornwall, take two rods with you one for bottom fishing and one for lure fishing, rotten bottom rigs running ledger 2 ounce weight and peeler or soft crab,as for lure fishing experiment with plugs ,poppers and redgill eels about 4ft behind a bubble float early morning or a hour before darkness
i would say peeler crab as bait and would expect some decent bass. would also try float fishing as well using a pike float, great fun and god no,s what you could catch down there.
