It goes on how big the cross-country and track programs are at the school. Schools with big teams and compete in like Division I or II probably make around $30K and $40K. At smaller team schools it most likely less. It will also help to get endorsements for the team and make sure the runners do well.

What foods should I eat the night before a track meet?

I would imagine about that as an assistant professor, probably about $35-40,000 range at a university. Maybe a bit less at a smaller college.

What do you think if they had running races that include stairs?

That completely depends on the size of the school (i.e. how many scholarships the school has for Track), how competitive the school is in athletics, and the town that the school is located in. For instance, the head coach for UCLA will have a much higher salary than the coach for Nebraska because LA is much more expensive to live than Lincoln and UCLA is one of the top T & F schools every year. How much money they actually make is beyond me but if I had to guess I would say UCLA's head coach is probably making 6 figures, if not really close.
