Operation Raleigh and Coral Cay Conservation are two of the biggest conservation-volunteer organisations in the UK. They have projects world-wide, but it's not cheap to get on one of their programs. But just consider for a moment: How eco-friendly do you think is it to fly halfway round the world to count fish for 6-12 weeks?
If you're serious about marine conservation (and not just looking for an extended holiday), you should think about signing up with a local conservation organisation, such as the Marine Conservation Society, or British Divers Marine Life Rescue. MCS runs databases to which volunteers can contribute sighting details, year-round and for the rest of your life, and this data may be used to inform official policy-making.
Or study marine biology at Uni--there are some world-renowned faculties in the UK, e.g. Southampton, Bangor, Plymouth. You would then be qualified to start making a genuinely useful contribution to our knowledge of the Oceans, and the world could be your oyster...
