When filleting a trout, do you leave the skin on?

Is it normal to leave the skin on a trout to cook it? Or should it be removed, some of the trout I have are 'so' small.

Well, the skin is good and healthy. If you are going to fillet, the skin will fall off of the meat when you cook it and imparts no bad flavor.

Depending on how big it is, if it is 12 inches or under you can leave the skin on if you scale it, otherwise you will need to cut it off. A trout has very small scales and I have ate small trout 4" to 6" with the scales on. While on the river bank. Hope this helps.
