the same way a duck-dive works. you just push the nose underwater and giver her some gas! They minght have some special jet-ski's that are perhaps built for this as most jet-ski's are idot proff in this way, so people dont kill themselves.

You need the right jet ski.

It works best with the stand up jet ski. You can do it on a wave runner style, but there more of a chance to get hurt because of the speed involved to fully submerge it. Also they are more buoyant.
