I picked Triple H but I don't Think He Is the best person to be wrestling with in Smackdown vs. Raw 2007 but I've Been doing kind of good but lost a couple matches.

HBK, undertaker or kane any of those guys are good. HBK is a little on the small side so you have to keep on attacking when you play as him. Undertaker is good no matter who you face, he is big and powerful. Same thing for kane.The problem with those two is their speed. HHH is good but if you want to win all your matches choose ethier Undertaker or Kane.
